Garlic Mushroom Chicken Bites- Recipe
Ingredients
- 2 tbsp oil, divided
- 1 lb (500 g) boneless chicken thighs cut into 1-inch | 2cm pieces
- 0.5 teaspoon salt to taste
- 0.25 teaspoon cracked black pepper
- 2 teaspoon Italian seasoning
- 0.5 teaspoon each garlic powder and onion powder
- 0.5 teaspoon paprika
- 8 oz, (250 g) sliced brown mushrooms
- 3 tbsp butter (2 oz | 60g)
- 1 brown shallot chopped
- 1 green bell pepper (capsicum) seeded and chopped
- 4 cloves garlic minced
- 2 tbsp fresh chopped parsley
Instructions
- 1. Place a large pan over medium-high heat and add 1 tablespoon of oil. Add chicken to the heated oil. Add paprika, garlic powder, onion powder, Italian seasoning, salt, and pepper to taste. After thoroughly mixing, grill the chicken for 5–6 minutes, until it is well-browned and cooked through. Cooked chicken should be transferred to a platter, placed aside, and kept warm.2. In the same pan with 1 tablespoon of butter, heat the remaining oil. About 3–4 minutes later, add the mushrooms and continue to simmer them while stirring.3. Fill the pan with the remaining butter. Let bell peppers and shallots melt for approximately 3 minutes, or until they are just tender and fragrant. Add the garlic paste and cook for another 30 seconds or until fragrant.4. Re-add the chicken to the pan along with any juices that have collected while it has been resting. To uniformly coat in the pan juices, combine all the ingredients. Continue to heat for a further 1-2 minutes, or until the chicken is thoroughly cooked and all the vegetables are tender.5. Taste the food and, if desired, season with salt and pepper. Serve hot.
